Low-Carb Cinnamon Coffee Cake

Low-Carb Cinnamon Coffee Cake

Ingredients:

- 1 1/2 cup NAYA Almond flour

- 6 tbsp NAYA Monk Fruit Golden

- 2 Eggs

- 2 1/2 tbsp unsweetened apple sauce

- 1 tsp vanilla essence

- 2 tsp baking powder

- 1 1/2 tsp cinnamon

- 1/4 tsp salt

Crumb Topping:

- 1 1/2 cup NAYA Almond flour

- 5 tbsp NAYA Monk Fruit Golden

- 1/4 cup oats

- 3-5 tsp coffee (depending on your preferred strength)

- 1 tsp cinnamon

- 1/2 cup butter, melted

Method:

1. Preheat the oven to 180 degrees Celsius.

2. In a large bowl, combine all the wet ingredients. Slowly add the dry ingredients, mixing well until completely combined.

3. Line a small rectangular cake dish and pour in the batter, ensuring it's evenly spread.

4. Place in the oven for 15 minutes. While the cake is baking, combine all the crumb mixture ingredients in a large bowl. It might seem smooth, but that's alright.

5. Remove the cake from the oven and evenly crumble the second mixture over it, using your hands.

6. Place it back in the oven for another 20 minutes.

7. Once done, remove from the oven and let it cool completely before enjoying!
